Description

Sodium benzoate is a chemical compound with the formula NaC₆H₅CO₂. It is the sodium salt of benzoic acid and is commonly used as a preservative in food, cosmetics, and pharmaceuticals. Sodium benzoate has antimicrobial properties, making it effective in preventing the growth of bacteria, yeast, and molds, which is why it is often found in acidic foods and beverages like soft drinks, fruit juices, and pickles.

In addition to its preservative role, sodium benzoate is also used in the manufacture of some industrial products like dyes, and it is sometimes included in cleaning agents and disinfectants.

When combined with ascorbic acid (vitamin C) in acidic conditions, sodium benzoate can form benzene, a carcinogen. However, the amounts produced are typically very small, and regulatory bodies like the U.S. FDA consider sodium benzoate to be safe in the concentrations typically used in food products.
